Fall-Apart Carnitas Recipe Like Your Abuela Used to Make: A Taste of Home on Your Dinner Table!

Ingredients:

  • 3-4 lbs Pork shoulder, cut into large pieces
  • 1 Onion, chopped
  • 5 Garlic cloves, minced
  • 2 Cinnamon sticks
  • 2 Bay leaves
  • 2 Oranges, juiced and zested
  • 2 Limes, juiced
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 1 tbsp Vegetable oil

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. Pat the pork dry with paper towels and generously season with salt and black pepper.
  3. Heat a tablespoon of vegetable oil in a large, oven-safe pot over high heat on the stove.
  4. Add pork pieces to the pot and cook for 5-6 minutes, until all sides are golden brown.
  5. Add onions and garlic to the pot, and sauté until the onions are translucent.
  6. Add cinnamon sticks, bay leaves, oranges juice and zest, lime juice, salt and pepper to the pot. Mix everything evenly.
  7. Use enough water to cover the pork by at least one-third. Cover the pot with a tightly fitting lid and place it in the oven. Cook for two and a half to three hours or until the pork is fork-tender and reaches an internal temperature of 190-195°F (88-90°C).
  8. Remove the pot from the oven and cool for about 20-30 minutes to allow the juices and flavors to absorb into the meat.
  9. Carefully remove the meat from the pot, and transfer to a baking sheet lined with parchment paper. Tear the meat into bite-sized chunks.
  10. Keep the leftover liquid in pot, raise heat to a boil and simmer so that the liquid will reduce, and thicken to make as sauce for your meat.
  11. Shred and pull apart the meat into bite-size portions.
  12. Broil in the oven on high until crispy on the outside and moist on the inside, approximately four minutes per side set on top middle shelf away from the heating element*.
  13. Take care and do flip occasionally not to burn. Do not mix while cooking.
  14. Hello perfection! Serve in a taco, burrito or anything to fit your creative recipes along with the more congruent offers like cilantro, queso fresco, pickled red onions, salsa and many more toppings whose endless possibilities.
